CARIBOU CASSEROLE
6 caribou (or other venison) butterfly steaks salt and pepper
1 package dry onion soup mix
2 fresh tomatoes, quartered
1 can condensed cream of mushroom soup
1 cup milk
Flatten the steaks as thinly as possible with a meat mallet. Arrange in a shallow baking pan. Season with salt and pepper and sprinkle with dry soup mix. Arrange tomatoes evenly around pan. Combine soup and milk and pour over all. Bake, uncovered at 300°F. for 1½ hours, until the meat is brown and tender.
